Egg Burji

This is my version of Egg burji that can be had with chapatis or even bread.

Ingredients: Serves 2

Eggs (Muttai) -(3)
Onions (vengayam) - (1)
Tomato (thakkali) - (1/2)
Green Chillies (pachai milagai) -(2 - more if you want it more spicy)
Pepper(milagu) and Salt(uppu) to taste
Ginger Garlic Paste (inji poondu vizhuthu) - (1/2 teaspoon)
Turmeric Power (manjal podi) - (One pinch)
Sunflower or Olive Oil (ennai)- 2 teaspoons


1. Chop the onions into small fine pieces
2. Chop the tomatoes
3. Take a sauce pan.Pour the oil and let it heat
4. When oil is hot put the onions and add the ginger garlic paste
5. Add the green chillies
6. When the onion is golden yellow in color, add the tomatoes
7. Add a pinch of turmeric power
8. Fry them well. Add little water if needed.
9. In a separate pan, add little (1/2 spoon) of oil and put break open the 3 eggs
10. Keep beating them so that they turn out to be small individual pieces (It turns into a paste and further stirring them will result in dry individual pieces)
11. Add this individual pieces to the already made Onion tomato paste.
12. Add some pepper and salt to taste to garnish it

The above is a dry recipe. If you want to make it a bit gravy, then break the eggs in the same pan as the tomato onion paste and keep beating the egg in the pan till it gets cooked.
